Cards and candy bets

Family time rocks. As you can see.

This break has been so fun and full of games and food and movies and more fun. Now I have a few more days of relaxing and then back to reality.

Cousin game night? Heck yeah

Also, Chinese night? It’s almost more popular than Christmas dinner with our family.
Friends, sometimes things happen. Things change. People realize things and learn about themselves. And that’s ok. It’s good. It’s hard, but it’s good. The best thing to do is embrace it and move forward. On the same page, happy, and content with the fact that the future will happen and that’s ok. 
Anyway enough of my vague ranting.

My favorite Thanksgiving dish

So I thought I would be less busy, but then I got all my final project assignments and papers and realized that I have tests coming up. Soooo my serenity is gone. I’m going a little crazy but honestly I’m still loving it.

As promised, here is my favorite dish from Thanksgiving. It may sound odd, but I promise you’ll want to make it and eat it and never eat anything else. Most families don’t do this, and I love that this has been a part of my Thanksgiving ever since I can remember!

Onion Rice

Ingredients:
1 cup long cooking rice
1 medium onion
1 cup water
¼ cup margarine
1 can Campbell’s French Onion soup.

Preparation:
Chop onion and sauté in margarine. Stir in rice, coating well. Pour soup and water over rice. Pour into casserole dish and bake for 40 minutes at 350°F. Serves six.

Tilapia:)

So this weekend was super fun! Friday, Drew and I made dinner (recipe below!) and watched the basketball game! Then Saturday we ran a million errands, went to the football game (it was FREEZING. But SO fun) then watched movies with friends after running more errands. All in all, a very good weekend.

So Drew had tilapia in the freezer, so naturally we had tilapia for dinner!

Yeah it looks weird. SO good I promise.
Recipe:
Ingredients: Tilapia, lemon juice (real or bottled), onions, soy sauce
Thaw your tilapia or get it fresh.
Pour half a cup of lemon juice and half a cup of soy sauce into a bowl. Let the tilapia sit in the mixture for however long you desire. Cut the onions into circles. Place the onions and tilapia in tinfoil and wrap TIGHTLY. Put in the oven at 350 for 10-15 minutes, or until fish is flakey and white.
SO GOOD.

November 14: I am grateful for music. I love everything about music and how it has such power to make people feel. GAH it’s wonderful.
November 15: I am grateful for getting flowers. Seriously it’s one of my favorite things. Flowers in general are just wonderful.
November 16: Cold water. Isn’t there something delightful about drinking a glass of cold water? That was something I really missed in Europe, there they serve you room temperature water and no ice. It was kind of the worst.
November 17: Today I am thankful for the awesome ward I have! Seriously. They are the best! Wouldn’t know what to do without them.

Tinfoil Dinner

So last weekend I went on a super duper fun date! We went to our friend Garrett’s house and had a bonfire in his BEAUTIFUL back yard. Really though, they have a pond and a cute little bridge. It’s adorable. ANYWHO. Bonfire. And we made tinfoil dinners and had s’mores and everything. It was delightful.

So to make your day less average today, here’s the tinfoil dinner recipe. It was so fun and easy and I would totally recommend it as a fun date, or even just getting a big group of friends or family together to do it!

Ingredients: 
2 small or 1 large brown potato per person
1/4 lb of ground beef per person
1-2 carrots per person
1/8 onion per person
Spices to taste
Begin by cutting all the vegetables into small pieces. You will want them fairly small or they will not cook! Then brown up your hamburger a little. You can do it raw if you are camping, I just air on the side of caution so we cooked our up a little to make sure it would be done on time! Spray a fairly large piece of tinfoil with cooking spray. Place the hamburger on the bottom, making sure to season with salt and pepper. Then place potatoes, carrots, and onions on the top. Season with salt and pepper, other seasonings that work well are: parsley, chili powder, cajun spices, basil, garlic powder/salt. Wrap the tinfoil around the dinner TIGHTLY. Make sure there are no places for air to get in or out or it will not cook right. Place on the embers/coals of the fire. Let cook for 30-40 minutes. Carefully remove from the fire and enjoy!

The Top 10 Things You’ll Need In College

So everyone probably has their special items that they felt were crucial for college. I have a few of those as well. So welcome to Maddy’s Top 10 Things You’ll Need In College!

10. Hangers. I never had enough! Make sure you bring plenty so you can fit all your clothes and don’t have to wad them up in piles all over. Nobody wants that.
9. Pens. I used pens up the WAZOO at school. Get plenty!
8. A good coat! You walk outside every single day. Rain and shine and SNOW. So get a coat that will keep you warm during the freezing winters. You won’t regret it!
7. Vegetables. Yes this is happening. Vegetables are a crucial college item. You’ll think you’re all big and tough and don’t need to buy them, but you do. They’ll help you not get sick!
6. A laundry bag or basket. I had both and it made my life SO much easier.

5. Ice cream. This is also happening. It’s important to eat healthy. It’s also important to have treats so that you don’t stress out too much. Find a HEALTHY balance and let yourself go there sometimes!
4. Appliances. Chat with your roommates about who has a toaster/iron/waffle maker, etc. You don’t want to have to buy everything yourself, but you also don’t want to get to school and realize you can’t have waffles!
3. A good computer. I used my computer EVERY SINGLE DAY. I wouldn’t recommend buying a cheap one and hoping you’ll get by. Invest in one you can use for all of college.
2. A solid backpack. Yes there are cute ones that are cheap in every store, but I wouldn’t recommend one of those. You will have lots of books and probably a computer in your backpack every day. Get one that will last!

And the number one thing I would recommend to have at school?

1. A good attitude!!! Cliche? Maybe. Crucial? YES. The more you try to be happy, the better your day will be. The more you tell yourself you can do something, the more likely it will be that you can!

It was the most adorable picnic and such a fun date! Guys, picnic dates are awesome!
Well now I’m off to clean my car (inside and out) and figure out just how I’m going to pay for all the billions of things I need for school. So that should be fun.

Eva

First of all, happy 13th to my favorite missionary! So Randy and I write lyrics to our favorite songs on the back of our letters, or quotes from movies, or things like that. So here’s what he wrote on the last letter….”There’s something in your smile that says everything’s gonna be alright.” It’s part of this song. Listen. I promise it’s worth it:)

So yesterday was a super great day:) Jonas and I headed off to Salt Lake City for dinner and a wedding (congrats Bree and Nathan! Ya’ll are wonderful:))

So my mom suggested we try Eva. It looked kinda sketch on the outside so we were a little hesitant…..

It was seriously the CUTEST restaurant EVER. I walked in and was in love.

We decided to sit out back….best choice ever. It reminded both Jonas and I of Italy. It was this small, cozy patio with hanging lights and plants. GAH I LOVE THIS PLACE.
And the food was AMAZING. It’s a small plate restaurant so you order five or six small plates for the same price as a huge meal. Every single thing we ordered was AMAZING. Even the pig stomach. I don’t think Jonas knew that’s what we were eating;)

So if you’re in Salt Lake City and want an amazing restaurant for a great price, that’s NOT a chain. Go to Eva. HUGE shout out to my mom for recommending it.

Dr. Pepper and Letter Drought

So I’m slacking on giving you the news/actually blogging anything. Being at work at 8:00 a.m. leads me to not  have time in the morning, and be way to lazy in the evening. Luckily, I have today off! So here’s what’s been up:)

On Monday I went on a fun date hiking. Someone thinks he’s funny by taking ugly pictures and pretending to give me real Dr. Pepper (I only drink diet…). So that was a fun time:) I also went to breakfast with a great friend and had a wonderful day. We even found our gimpy duck which has been MIA for the past two years. Coincidence? I THINK NOT.

This cutie got her braces off!! Which meant caramel apples for all:) Watch out world..she’s prettier than ever!

The road into my subdivision is closed. And you’d think I would remember that with all of these signs hanging around. Well you would be wrong. I have tried to drive the normal way out 185738956385 times, and every single time, it is a dirt road with lots of machines on it. So I get to flip around and grumble under my breath as I take the long way to get back to the main road. So that’s fun.

If construction in my subdivision isn’t enough, all of 2nd North is being ripped up. So I get to slowly follow construction vehicles through the winding, made up lanes of traffic. That’s fun.
Also I’m on day 15 of my letter drought. Thank goodness for emails or I would be one unhappy girl. Crossing my fingers that the mail gets figured out, and those letters get here soon!
Now I’m off to figure out what to make for dinner for the next few days while my mom rests. Just call me mother for the next couple days;) But not really. Don’t worry, I’ll show you all exactly what’s going on. Promise;)
And I’ll get some major headlines up soon. That’s also a promise!
